This Holiday when you get together with Family and friends- remember that no family is perfect ...that you too no matter how SPECIAL will anoy someone at the dinner table. There will be people missing from that gathering because they have passed on or by choice. This may be a problem for some but look around you! Look at the ones who showed up despite what was going on in their lives- look at the children who deserve a happy memory -the ones that you hold onto in old age. You may not remember every present you received as a child - but you do remember the Family and friends , what spot the Tree belongs in- that one special dessert that must be there. If you find yourself feeling Sad or angry check it at the door- tell a story about the ones who have passed on- drink a toast and bless those who are missing no matter what the reason and CELEBRATE!!!! Christmas is about HOPE and the dawn of Redeeming Grace! I love what the Mom said in the movie the Family Stone -one of the characters in the movie who the whole family was giving a hard time to at Christmas asked ,"what makes you guys so special" She replied " we're not, we're just all we've got! This Holiday season LOVE THE ONES YOUR WITH- Peace and Love Kristine

And, above all, finding within the cloud of disease, the silver lining, the positive effects that thyroid disease has had on my life.

"You must be wholehearted with the LORD your God" (תָּמִים תִּהְיֶה עִם יְהוָה אֱלהֶיךָ) (Deut. 18:13). Notice the little word "with" in this verse (עִם). This verse hearkens to Micah 6:8: "What does the LORD require of you but to do justice (mishpat), and to love kindness (chesed), and to walk humbly (hatznea lechet) with your God?" Having a humble heart walks with the LORD. The word translated "humbly" comes from the same root that gives us the word tzeniut (צְנִיעוּת), meaning modesty or humility. Humility begins with the awareness that 1) there is a God and 2) you are not Him.... It is the practice of "knowing before whom you stand" and living your life in light of this basic truth. A.W. Tozer wrote: "The humble man will attain a place of soul rest. As he walks on in humility he will be happy to let God defend him. The old struggle to defend himself is over. He has found the peace which humility brings." May it please the LORD to give us all hearts of genuine humility.

Orange-Pecan Cookies
If you are looking for a cookie that's lower in calories than your favorite chocolate chip recipe, whip up a batch of these palate-pleasing bites from pastry chef Heather Norkin. They're easy to make, and almost all of the fat is the heart-friendly unsaturated kind, from the pecans.

Makes 16 cookies
INGREDIENTS
1 cup chopped pecans
1/3 cup sugar
1 teaspoon grated orange zest
1 teaspoon orange extract
1 egg white, lightly beaten
Canola-oil cooking spray
Powdered sugar (optional)
PREPARATION
Pulse pecans and sugar in a food processor into a sandlike texture. Transfer to a bowl and stir in zest and extract. Slowly stir in egg white until a thin dough forms. Cover and chill at least 2 hours. Heat oven to 350°. Lightly coat a baking sheet with cooking spray. Measure 16 heaping teaspoonsful of dough and roll each into a ball. Place balls on sheet, 2 inches apart. Bake 8 to 10 minutes. Cool completely before removing from pan. Dust with powdered sugar if desired.

Pumpkin Dumplings


Gluten-Free Pumpkin Dumplings With Radicchio

Something to keep in mind when you make this recipe — it’s a lot easier than you think. The dumplings are super light and pillowy, but if you prefer a firmer texture, add more gluten-free flour, 1 tablespoon at a time, to the pasta dough.

1 15-ounce can pure pumpkin puree
2 large eggs, lightly beaten
1 cup store-bought gluten-free flour blend
Salt
2 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
1/4 teaspoon crushed red pepper flakes
1 small head radicchio, sliced into 1/4-inch strips (about 2 cups)
2 tablespoons chopped fresh flat-leaf parsley

1. Bring a large pot of salted water to a boil. In a large bowl, combine the pumpkin puree, eggs, flour and 1 teaspoon salt to make the dough.

2. In a large saucepan, heat the olive oil over medium heat. Add the onion and red pepper flakes and cook until softened, about five minutes; remove from the heat and set aside.

3. When the water comes to a boil, use a teaspoon to scoop up the dough and form a dumpling, then carefully slide the dumpling off the spoon and into the boiling water. Continue forming dumplings until half the dough is used. Cook until the dumplings float, then simmer for about two minutes; remove with a slotted spoon and add to the saucepan with the onion. Repeat with the remaining dumpling dough.

4. Return the saucepan with the onion to medium-high heat. Toss in three-quarters of the radicchio and stir gently until just wilted, about two minutes; season with 1/2 teaspoon salt or to taste. To serve, divide the dumplings and sauce among four bowls and top with the remaining radicchio and parsley.

Yield: Serves 4. I do not have gluten problems so I am going to use regular sifted flour- or maybe cake flour, also add a little chicken stock( i like trader Joes) to the onions

Coconut Macaroons


Ingredients

1 1/3 cups flaked coconut
1/3 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
2 egg whites
1/2 teaspoon vanilla extract
Directions

In a small bowl, combine the coconut, sugar, flour and salt. Stir in egg whites and vanilla; mix well.
Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 325 degrees F for 18-20 minutes or until golden brown. Cool on a wire rack.
Drizzle with bittersweet chocolate or enjoy plain- if you want to have the almonds place on macaroon and press slightly before cooking

If you like pancakes, you'll love pumpkin pancakes. Throw in some chopped apple, or a handful of raisins or even some chopped cranberries if you like. Enjoy with warm maple syrup.
Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients:

1 cup all-purpose flour
1/4 cup packed brown sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 large egg, lightly beaten
1 tbsp canola oil
1 cup nonfat milk
1/3 cup pure pumpkin
Preparation:

Whisk flour, sugar, baking powder, salt, cinnamon, ginger and nutmeg together in a medium bowl. Combine egg, oil, milk and pumpkin in a small bowl. Stir pumpkin mixture into dry ingredients. Leave to stand for five minutes.
For each pancake, scoop 1/4 cup of batter on to a hot griddle or nonstick skillet sprayed with cooking spray. Turn pancakes when bubbles appear and edges are cooked, after about 2 minutes. Cook for 1 1/2 minutes on second side.

Makes 8-10 pancakes.

HOW WE TEST
Method: We held four blind tastings of creamy, crunchy, natural creamy, and natural crunchy peanut butters (16 in all) on 4 separate days. To see how the samples fared in baking applications, we tested them in a standard cookie recipe.

Nutritional guidelines: We evaluated peanut butters that had 190 to 210 calories and 15 to 17 grams of fat per 2-tablespoon serving. None contained more than 3 grams of saturated fat, 150 milligrams of sodium, and 4 grams of sugars. We did not rate any spreads made with partially hydrogenated oils or palm oils.
