Spinach Fettuccine With Yogurt-Cream Sauce From SELF Dishes


Serves 4

INGREDIENTS

  • 8 oz spinach fettuccine
  • Vegetable oil cooking spray
  • 1 teaspoon olive oil
  • 1 medium zucchini, thinly sliced
  • 1 medium yellow or 4 to 5 pattypan squash, thinly sliced
  • 1 small red bell pepper, cored, seeded and sliced
  • 2 cloves garlic, thinly sliced
  • 1/4 cup nonfat, low-sodium chicken broth
  • 1/2 cup nonfat Greek yogurt
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons reduced-fat Parmesan
  • 1 tablespoon light cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

PREPARATION

  1. Cook pasta as directed on package; drain. Set aside. Coat a large skillet with cooking spray. Heat over medium-high heat; add oil. Add zucchini, squash, bell pepper and garlic. Reduce heat to low; cook until pepper begins to soften, 2 to 3 minutes. Add broth; cook until all vegetables are tender, 3 to 4 minutes. Remove from heat; add pasta, yogurt, basil, cheese, cream, salt and pepper. Toss and serve immediately.

This Holiday when you get together with Family and friends- remember that no family is perfect ...that you too no matter how SPECIAL will anoy someone at the dinner table. There will be people missing from that gathering because they have passed on or by choice. This may be a problem for some but look around you! Look at the ones who showed up despite what was going on in their lives- look at the children who deserve a happy memory -the ones that you hold onto in old age. You may not remember every present you received as a child - but you do remember the Family and friends , what spot the Tree belongs in- that one special dessert that must be there. If you find yourself feeling Sad or angry check it at the door- tell a story about the ones who have passed on- drink a toast and bless those who are missing no matter what the reason and CELEBRATE!!!! Christmas is about HOPE and the dawn of Redeeming Grace! I love what the Mom said in the movie the Family Stone -one of the characters in the movie who the whole family was giving a hard time to at Christmas asked ,"what makes you guys so special" She replied " we're not, we're just all we've got!
